Ready, Set, Grill
![]() If you have diabetes, grilling is a great way to prepare meals. Here's how to make the most of a healthy barbecue. Sure, firing up the barbecue or gas grill provides you with a sociable, relaxing time in the backyard, which is an instant stress buster. But it’s particularly beneficial for people with diabetes because grilling happens to be a healthy cooking technique. Grilled foods typically don’t require high-fat sauces or accompaniments. And much of the fat drips away and never makes it to your plate. Here are a few ways to make your outdoor cooking even more healthful. Bypass burgers and fill the grill with seafood and lean cuts of meat. You don’t have to gorge on fatty burgers and bratwursts just because you’re cooking outside. Healthier choices include skinless chicken breasts, beef tenderloin or sirloin, and fish. Disrobe your chicken. Or you can leave the skin on while it’s cooking to seal in moisture, and pull it off afterward. It will save you a load of saturated fat—which hampers insulin sensitivity and increases the risk of heart disease—and calories. Bathe meats in a vinegar-based marinade. A study conducted at Arizona State University found that eating 4 tablespoons of cider vinegar before eating a high glycemic-index meal (one that includes foods that tend to raise blood sugar quickly) lowered the effect of the meal on participants’ blood sugar by about 55 percent. Low-fat Italian vinaigrette salad dressing with extra vinegar added will even do the trick. You also can experiment with your own marinades using vinegar, olive oil, wine, lemon juice, lime juice, garlic, and herbs. Splurge on grilling lessons. Grilling may seem simple, and it is—if you know how to do it properly. You’d be surprised at how valuable even a few simple grilling secrets can be. Do you know how often to flip a piece of meat and when to do it? How to tell when the food is done without cutting into it? The more you know, the more fun you’ll have. For a special event such as a milestone birthday or anniversary, consider hiring a chef to come to your backyard. He can whip up a meal for your party and work in a lesson. Ask him to focus on healthy foods that you don’t know how to grill—say, salmon fillets, scallops, or pork loin. The more healthy dishes you’re excited to cook at home, the fewer calories (and dollars) you’ll waste at restaurants. Skewer some squash, portabello mushrooms, eggplant, and zucchini. Many of your favorite fruits and vegetables will pick up an alluring new taste when grilled. Sliced squash, eggplant, bell pepper, portabello mushrooms, onions, tomatoes, pineapple, peaches, and apricots all fare well on a grill. Coat veggies with a little olive oil before adding to the grill. For small or thin slices that might fall through the bars of your grill grate, use skewers or special grilling baskets, which you can buy in home improvement and cooking stores. Grill delicate foods in packets. Making dinner on the grill doesn’t automatically mean charbroiled meat and corn on the cob. Packet cooking lets you cook all sorts of foods on the grill. Just center the ingredients on a large sheet of aluminum foil, add a little olive oil or broth, then fold up the sides, leaving some room for steam to circulate inside. Set the packets on the grill. This strategy works particularly well for delicate or quick-cooking foods, such as fish and boneless chicken breast. Even lean meats stay tender. Put out a variety of vegetables (bell peppers, onion, snap peas, corn, etc.) and seasonings and let each member of the family design his or her own packet. From Reader's Digest

Preparation time: 5 minutes Cooking time: 35 minutes You Will Need 5 medium potatoes, peeled and thinly sliced 1 medium onion, sliced 6 tablespoons butter 1/3 cup shredded cheddar cheese 2 tablespoons minced fresh parsley 1 tablespoon Worcestershire sauce Salt and pepper to taste 1/3 cup chicken broth What to Do 1. Place the potatoes and onion on a large piece of heavy-duty foil (about 20 inches x 20 inches); dot with butter. 2. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. Fold foil up around potatoes and add broth. Seal the edges of foil well. 3. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender. Serves 4-6

Texas-Style Barbecued Chicken
![]() Texas is known for its amazing barbecues, so of course this grilled Texas-style chicken recipe is out of this world. Enjoy delicious barbecued chicken with these recipes for Texas, Tar-Heel, and Jamaican styles. Prep time: 1 hour Cooking time: about 1 hour You Will Need 2 tablespoons olive oil 1 large yellow onion, chopped 1 stalk celery, chopped 2 cloves garlic, minced 1 cup ketchup 1/2 cup bourbon 1/2 cup canned reduced-sodium chicken broth 1/4 cup molasses 3 tablespoons cider vinegar 1 tablespoon prepared yellow mustard Zest and juice of 1 lemon (about 2 teaspoons zest, 4 1/2 teaspoons juice) 1/4 to 1/2 teaspoon hot red pepper sauce 1 boiler-fryer (3 to 3 1/2 pounds), quartered What to Do 1. In a medium saucepan over moderate heat, heat oil 1 minute. Add onion and celery and sauté, stirring occasionally, until soft -- about 5 minutes. Add garlic and sauté 2 minutes more. 2. Add ketchup, bourbon, broth, molasses, vinegar, mustard, lemon zest and juice, and hot red pepper sauce and bring to a boil over high heat. Reduce the heat to low and simmer, uncovered, for 20 minutes; set aside or cool, store in a container with a tight-fitting lid, and refrigerate for up to 3 days. 3. Gently pull the skin back from the chicken to expose the flesh but do not tear or remove it. Place in a large self-sealing plastic bag, add half the sauce, seal, and refrigerate for at least 4 hours or overnight, turning occasionally. Refrigerate remaining sauce until ready to use. 4. Preheat the grill or broiler. Remove chicken from bag, reserving sauce. Smooth chicken skin back into place and arrange chicken, skin side down, 5 inches above a drip pan over glowing coals. Cover the grill, leaving the vents halfway open (or adjusting for the wind and outdoor temperature). Cook chicken, turning once, until both sides are browned -- 15 to 20 minutes. Brush chicken generously with sauce and continue grilling and basting, turning once, until the meat near the thigh bone is no longer pink when cut -- 25 to 30 minutes more. Note: To broil in the oven, place chicken, skin side down, 7 to 9 inches from the heat and broil 5 minutes more. Turn chicken and continue broiling and basting about 15 minutes more. 5. Meanwhile, in a small saucepan over low heat, heat the refrigerated sauce from Step 3 until hot and bubbly. Serve as a dipping sauce with the barbecued chicken. Serves: 4 Per serving: Calories 746; total fat 29 g; saturated fat 7 g; protein 44 g; carbohydrate 52 g; fiber 2 g; sodium 929 mg; cholesterol 141 mg Jamaican Jerk Chicken Prepare as directed above, but use the following sauce: 1/4 cup olive oil, 2 minced cloves of garlic, 2 tablespoons each white wine vinegar, lime juice, and grated fresh ginger, 1 tablespoon molasses, 1 teaspoon each hot red pepper sauce, salt, and ground allspice, and 3/4 teaspoon ground cinnamon. Use sauce to marinate and baste the chicken. Makes 4 servings. Tar-Heel Barbecued Chicken Prepare as directed above, but use the following sauce: 6 tablespoons cider vinegar, 2 tablespoons each vegetable oil and firmly packed light brown sugar, 2 minced cloves garlic, and 1 teaspoon each red hot pepper sauce and salt. Let sauce stand at room temperature for several hours before using to marinate the chicken. Makes 4 servings

In a small bowl, whisk the mayonnaise, pickle relish, ketchup, sugar, and onion until well blended. Cover and refrigerate. 2. In a large bowl, combine the Worcestershire sauce, salt, garlic powder, and pepper. Crumble beef over mixture; mix well. Shape into eight patties. 3. Place bacon on a piece of heavy-duty foil on one side of the grill. Place the patties on the other side of the grill. Grill, covered, over medium-hot heat for 20 minutes or until bacon is crisp and meat patties are no longer pink, turning once. 4. Drain bacon on paper towels. 5. Place a cheese slice on each patty; cover and grill until cheese is melted. 6. Layer bottom half of each bun with lettuce, patty, bacon, and mayonnaise mixture. Add bun tops. Serves: 8

Be careful not to let garlic burn. Add broth, tomatoes, cannellini beans and potatoes. Bring to a boil. Reduce heat, and allow vegetables to simmer 15 to 20 minutes or until potatoes can be easily pierced with a fork. Use an immersion blender to puree soup. Or allow soup to cool for 10 minutes, then transfer in batches to a Vita Mix blender or regular blender to puree. Return to pot. Add hot dogs, crushed red pepper flakes and salt and pepper. Cook another 7-10 minutes until hot dogs are done. Taste and adjust seasonings before serving. Cream Cheese and Jelly Sandwiches. ![]() Kids love the combination of cream cheese and jelly. The rice cakes make a nice "bread" for this sandwich, because they keep the sandwich from getting soggy. This cream cheese and jelly sandwich is perfect for school lunches. It doesn't get soggy, and kids love this unique sandwich. Just be sure to pack a cold pack, so the cream cheese stays fresh. You'll need an enameled cast iron dutch oven (Compare Prices) for this recipe, which uses a unique method of cooking an entire meal in one pot. The technique is a patented cooking method, trademarked by Elizabeth Yarnell of Glorious One Pot Meals. Similar to slow cooking, it basically steams everything in one pot. But instead of the flavors melding together like they do in Crockpot meals, this method maintains the separate integrity of each ingredient. I've changed Yarnell's method a bit in this recipe by removing the cover at the end to allow the cheese to brown. Prep Time: 10 minutes Cook Time: 35 minutes Ingredients: 1 cup converted rice 1-1/4 cups water 1 14 oz. can diced tomates and green chilies (with the juice) 1 cup canned black beans, rinsed and drained 1/2 cup corn 1 tsp. chili powder 1-1/2 cups shredded cheddar cheese Preparation: Preheat oven to 450 degrees. Spray a 5-quart enameled cast iron dutch oven with a lid (Compare Prices) with cooking spray. Put all of the ingredients except the cheese in the dutch oven. Stir, and cover. Bake 25 minutes. Remove cover. Stir. Top with cheese and bake an additional 5-10 minutes until the cheese is browned and all the liquid is absorbed. ![]() It is that time of the year when haleem is cooked in nearly every house. To make things easier, YOU along with Mrs. Saleem Zakir brings a delicious haleem to satisfy your appetite. Happy cooking! Ingredients: - Wheat 1/2 cup - Chana dal 1/3 cup - Moong dal 1/3 cup - Masoor dal 1/3 cup - Beef/Mutton (cut in cubes) 1/2 kg - Turmeric powder 1/4 tsp - Oil 4 tbsp - Onions (sliced) 2 - Ginger-Garlic paste 2 tbsp - Coriander seeds (roasted and powdered) 2 tsp, - Cumin seeds (roasted and powdered) 1/2 tsp - Green Cardamom 5 - Yoghurt 1 cup - Bay leaves 2 - Red chillies 2 - Garam masala 1 tsp - Red chilli powder 1 tsp - Black pepper 1/2 tsp For Garnish: - Mint leaves 4 tbsp - Coriander leaves 4 tbsp - Green chillies 1 tsp - Onion (sliced) 1 - Lemon (cut into quarters) 4 - Butter 2 tbsp METHOD: - Wash and marinate the cubed mutton pieces in salt and turmeric for 30 minutes. - Wash and soak the wheat overnight in generous amount of water in a bowl. - Likewise in a different bowl, wash and soak the dals overnight in lots of water. - In a pan at medium heat, pour oil, onion ginger garlic paste, coriander and cumin seed powder, green cardamom powder and fry them till light brown. n After a minute add the yoghurt and grind it into a mixture. n Now, grind the dals to form a separate mixture. - Meanwhile, in a different pressure cooker, add oil and add the marinated mutton. Fry it till brown and then add water to make it tender. - Then cook the wheat in water to soften it up and form a mixture of it. - Now, in a big bowl at medium heat, pour some more oil add the dried red chillies and bay leaves. Once they start spluttering, pour all the mixtures in it. - Add some more salt, garam masala, red chilli powder and black pepper powder. If the mixture appears to be too thick and you want it a bit loose in consistency, add the meat stock till you get the consistency you like. - Simmer and let it boil for 10 minutes. - Fry the sliced onion till brown and crisp for garnish and keep aside in a bowl. - When you sit to have it, add each of the ingredients for garnishing and enjoy.
