There are a number of solutions which record on the phone and upload via some connection to your desktop - check Killer Mobile's Total Recall. We offer a solution, ReMoVault which includes automated upload to on-line storage, for call recordings, dictation and photographs - currently deployed in South Africa. Be aware that some countries or US states do not allow recording outright, some require 2 party notification.
