I'm quite lucky as I live in the Midlands. Lots of wood-land around for me to thrash about in. My personal favourite though is Sherwood Pines, its close to Center Parks in Sherwood Forest. I've attached some links below, check them out :

Sherwood Pines Forest Park Visitor Centre (place it all starts, bike hire, shop etc.)
Off Road Mountain Bike Trail (general routes around Sherwood Forest)
Dual Descender (two tracks side by side for racing)
Adventure Cycle Trail (cross country riding)

Obviously because it woodland it's also possible to just disappear of the stone tracks into woodland. Man I've had a few hair-raising moments, low tree branches, sharp corners & as you said, old faithful tree roots.

Never heard of Dalby Forest before, but I've checked out your link and think I maybe paying it a visit very soon
